Peach and Pecan Salad Recipe

Nothing better and healthier than a peach and pecan salad for this hot summer!
Ingredients:
3 tablespoons of apple cider vinegar
1 shallot, finely chopped
1/4 cup of extra-virgin olive oil
2 large ripe peaches, sliced into 14-16 pieces
1 romaine lettuce
1 cup of toasted pecan halves (buy pecans here)
4 ounces of goat cheese, cut into 4 pieces & crumbled
Salt
Freshly ground black pepper
Directions:
– Add the vinegar, shallot and season with salt and pepper in a small bowl.
– Gently whisk in the olive oil until completely distributed.
– In a large bowl, place the peaches, pecans, lettuce leaves, goat cheese and dressing.
– Mix well to distribute the dressing.
– Serve and enjoy.
